Little Clown fish (Nemo's!) were really cool too, they would often come out and defend their territory:

Moray eels were really cool to see swimming out in the open (I managed to catch one swimming in my video as he was trying to find a hidey hole)
On a couple of our dives we were lucky enough to see some "bait balls" which is a large swirling mass of fish, in this case, Jack fish:
Surreal experience swimming through them. They stay about half a foot away from you at the closest, never touching you. Video shows me swimming into one:
